Mushroom benefits stem from the phytochemicals they contain. The most prominent of these are beta- (1,3)(1,6) d-glucans. Others include ergothioneines, antioxidants, ergosterol, sterols, lipids, glycosides, chitins, diterpenes and triterpenes.

Most “mushroom products” in the United States come from mycelia that are grown in plastics bags on beds of sterile rice, wheat, corn or rye. As the mycelia grow, it integrates so thoroughly with the grain that it becomes impossible to separate. Thus, the finished product is perhaps 30% mycelium and 70% grain. Because of this, it is mostly starch and has very low levels of real mushroom nutrients.
